  • 300g Squid
  • ingredients for stuffing:
  • 60g Red onions , chopped
  • 60g Fresh tomatoes , chopped
  • 1 tsp Shrimp paste
  • 2 Tbsps Vegetable oil
  • ingredients for the sauce:
  • 1 Tbsp Vegetable oil
  • 1 tsp Garlic , minced
  • 1 Tbsp Red onions , minced
  • 2 pcs Whole tomatoes , chopped
  • 2 Tbsps Shrimp paste
  • 3/4 cup Coconut milk
  • 2 pcs Whole pandan leaves
  • Salt and pepper to taste

steps

  1. Wash and clean the squid. Remove innards and clean the cavity.
  2. In another bowl, combine the chopped red onions, fresh tomatoes and the shrimp paste.  Place this stuffing into the cavity of the squid and seal using a toothpick.
  3. Brush each squid with oil and grill until opaque.
  4. In a sauce pan, heat vegetable oil and sauté the garlic and red onion. Once onions are translucent, add the chopped tomatoes and the shrimp paste.  Bring to a boil and add the coconut cream and pandan leaves and simmer the sauce until reduced in half.
  5. Pour sauce on a platter and top with the grilled stuffed squid.
