  • 3 Tbsps Vegetable oil
  • 1 Tbsp Garlic , minced
  • 2-4 pcs Sili labuyo , seeded and chopped
  • 500 g Chicken breast or thigh , cut into bite-size pieces
  • 2 Tbsps Flour
  • A pinch of salt and pepper
  • 3 Tbsps Fish sauce or patis
  • 2 tsps Oyster sauce
  • 1 tsp Brown sugar
  • 10-12 pcs Basil leaves
  • 20 pcs Basil leaves for frying to be used as garnish

steps

  1. Prepare chicken by coating with flour, salt and pepper. Set aside.
  2. Heat the oil over moderate heat in a wok or large frying pan. Add the garlic and chilies and stir fry until golden.
  3. Add the coated chicken and stir fry until it changes color.
  4. Season with fish sauce, oyster sauce and brown sugar. Continue to stir until chicken is cooked. Stir in the fresh basil leaves. Garnish with the deep fried basil leaves.
