ingredients

  • 1 kilo liempo , sliced 1-inch thick
  • 1 Tbsp rock salt
  • 1 Tbsp sugar
  • 1/4 cup sukang Iloko (or any vinegar desired)

steps

  1. In a bowl, combined  rock salt, sugar and sukang Iloko. Rub pork with this mixture and let stand  for about 20 minutes or until the  salt has  melted.
  2. Grill pork  over charcoal until grill marks become visible. Sinarabasab means  “rarely done.”  This is why the pork is cooked only for a few minutes.
  3. Serve  with Ensaladang  Ilokano.
