ingredients

  • 2 cups fresh passion fruit pulp
  • 300 g silken tofu
  • 600 ml buttermilk
  • 1 Tbsp caster sugar
  • 1 tsp vanilla extract
  • ¼ cup powdered unflavored gelatin , dissolved in
  • 1/3 cup hot water
  • ingredients for the garnish:
  • 8 Tbsps fresh passion fruit pulp
  • 1 cup fresh strawberries , washed and cut in half lengthwise

steps

  1. In a saucepan, simmer passion fruit pulp. Pass through a sieve and discard the seeds. Let it cool down.
  2. In a food processor or blender, blend passion fruit pulp and silken tofu for about one minute. Add buttermilk, caster sugar and vanilla extract. Blend for two minutes until smooth.
  3. In a small bowl, dissolve gelatin in hot water. Stir until well blended. Add gelatin mixture to food processor. Blend all ingredients until mixture is smooth.
  4. Pour into ramekins and cool. Cover with plastic wrap and refrigerate overnight.
  5. To serve: dip bottom of ramekin in hot water for a few secons. Run a sharp knife around edges to loosen. Put a plate over the ramekin and immediately invert to unmold. Garnish with passionfruit pulp and strawberries.
