ingredients

  • 1 pc small ginger , washed well
  • Juice of one lemon
  • 5 Tbsps honey
  • Medley of your choice of fresh and frozen fruits , cubed
  • Plain nonfat Greek yogurt or any thick plain yogurt
  • 1 Tbsp lemon zest , grated
  • 1 cup granola , toasted
  • Mint sprigs , for garnish

steps

for the fruit:

  1. Grate the ginger into a small bowl (no need to peel). Squeeze pulp through a strainer to get a total of about a tablespoon of juice.
  2. Combine ginger juice with lemon juice and two tablespoons of honey.
  3. Add fruit to mixture and toss gently to coat.


for the yogurt:

Combine yogurt, lemon zest and about 3 tablespoons of honey. Set aside.

procedure:

  1. Layer the fruit, yogurt and toasted granola in individual clear glass containers. End the layers with yogurt and a sprinkling of granola topped with mint sprigs for garnish.
  2. Keep refrigerated until ready to serve.
