ingredients

  • 10 pcs Bread , remove crust
  • 1 Boiled chicken breast , cut into cubes
  • ¼ cup Light mayonnaise
  • ¼ tsp Mustard
  • 1 Tbsp Onions , finely chopped
  • 2 Tbsps Celery , finely chopped
  • 1 Tbsp Prepared pickle relish
  • ¼ cup Boiled carrots , diced
  • ¼ tsp Dried tarragon or 1 tsp fresh tarragon , chopped
  • 2 Tbsps Almonds , chopped
  • Salt and black pepper to taste
  • 7-8 leaves Lettuce , thinly sliced

steps

  1. Cut the crust of the bread. Press each piece of bread slightly into the muffin tin one by one forming little bread cups.
  2. Bake or toast bread for 8-10 minutes. When it’s toasted, remove the bread from the muffin tin. Set aside.
  3. In a bowl, mix all ingredients, except lettuce.
  4. Place the lettuce inside the toasted bread cups then fill with the chicken salad mixture.
