ingredients

  • 2 cups Coconut cream
  • 2 ½ cups Water
  • 3 Thumb-sized pieces Galangal , sliced thinly
  • 4 Kaffir lime leaves
  • 200g Boneless chicken thighs cut into strips
  • 2 stalks Lemon grass , crushed
  • 1 can Straw mushrooms , drained and cut in half
  • ½ cup Lime juice
  • 4-5 Tbsps Fish sauce
  • 2 Tbsps Brown sugar
  • 2-3 pcs Red chili sliced diagonally

steps

  1. Put coconut cream, water, galangal, kaffir leaves, chicken and lemon grass into a saucepan and bring it to a boil over medium heat.
  2. Add straw mushroom and boil mixture over medium heat for a few more minutes. Season with lime juice, fish sauce, brown sugar and red chili (optional). Just before serving, remove lemon grass, kaffir and galangal.
  3. Top with chopped coriander leaves and more chili.
