  • 3 lbs round or chuck steak , cut into strips
  • 1 pc medium onion , chopped
  • 5 pcs garlic cloves , chopped
  • 1 Tbsp fresh ginger , chopped
  • 5 pcs red hot chilies , chopped or 2 Tbsps crushed dry chili
  • 2 cups coconut milk
  • 1 ½ tsps salt
  • 1 tsp ground turmeric
  • 2 tsps ground coriander
  • 2 tsps galangal powder
  • 4 tsps paprika
  • 6 pcs kemiri
  • 6 pcs kaffir lime leaves
  • 1 Tbsp lemon grass powder or 1 stalk of fresh lemon grass
  • ½ cup tamarind juice
  • ½ cup water

steps

  1. Mix all ingredients except the meat in a blender or food processor. Put the mixture on a large saucepan on high heat. Add meat and bring quickly to a boil.
  2. Reduce heat to moderate, stirring occasionally until sauce is reduced by one-half. Turn heat to low and continue cooking until gravy is almost dry stirring frequently. Be sure mixture doesn’t stick to pan.
  3. Allow meat to fry in remaining oil until dark brown.
