  • 1 stick Butter
  • 1 cup Brown sugar
  • 1 Egg
  • 1 cup MAYA All-Purpose Flour
  • 1 tsp Baking soda
  • 1 cup or 6 pcs Ripe bananas , mashed
  • ½ cup Chocolate chips
  • ⅓ cup Cashew or walnuts , chopped
  • 3 pcs Oatmeal cookies , crushed
  • ½ tsp Vanilla
  • 1 Tbsp Olive oil
  • 1 tsp Salt
  • Dash of cinnamon
  • Dash of nutmeg
  • ingredients for frosting:
  • 1 bar Cream cheese
  • 3 Tbsps Butter
  • 2 Tbsps Shortening
  • 2 tsps Vanilla
  • 2-2 ½ cup Confectioners’ sugar , sifted
  • Whole walnuts for garnish

  1. Preheat oven to 392ºF or 200 ºC.
  2. To prepare the cake, combine butter and brown sugar, then add the egg. Add flour and baking soda. Mix well. Add bananas, chocolate chips, nuts and crushed oatmeal cookies. Add the remaining ingredients and mix well. Scoop in the cupcake moulds with cupcake liner. Bake 20-30 minutes. Set aside to cool.
  3. To prepare frosting, beat cream cheese, butter and vanilla in a bowl. Add enough sugar gradually until desired consistency. Spread on top of cupcakes and decorate cakes with walnuts.
