  • 1 kilo Baking potatoes
  • 2 Tbsps Melted butter for brushing
  • ½ Small block quick melt cheese grated
  • ½ cup Sour cream
  • 6-8 rashers Bacon chopped and cooked
  • ¼ cup Chives or spring onions , chopped
  • ingredients for the seasoned flour:
  • ½ cup Flour
  • ½ tsp Onion powder
  • ½ tsp Paprika
  • ¼ tsp Salt
  • ¼ tsp White pepper

steps

  1. To prepare potatoes, wash and scrub whole potatoes until clean. Coat potatoes lightly with ordinary cooking oil and wrap tightly in foil. In a 350°F oven, bake potatoes for 1 hour. Remove from the oven, peel the foil and let cool. When cool, halve potatoes in the middle, making sure both sides are even.
  2. Hold the potato half in one hand, take a spoon and run the tip around the edge of the potato, slowly scooping out the “meat.” Use the cooked potato flesh to make mashed potatoes.
  3. Combine ingredients for the seasoned flour in a bowl. Take the potato skins and dredge each one, face down, in the seasoned flour. Dust off excess flour. Only the inner part of the potato must be seasoned.
  4. Bake coated potato skins in a 350°F oven. After 10 minutes, remove from the oven and brush insides with melted butter. Cook for 5 minutes more.
  5. Remove from the oven and top with grated quick melt cheese. Bake again until cheese melts. To serve, top cheesy potatoes with sour cream, bacon bits and chopped chives.
