  • 1 kilo Pork liempo , cooked as a saucy adobo
  • 3 Tbsps Cooking oil
  • 1 tbsp Garlic , minced
  • 1 onion chopped
  • 1 cup adobo sauce
  • 6 cups cooked rice
  • rock salt
  • ingredients for the topping:
  • 3 Red eggs peeled and sliced
  • 4-5 Tomatoes diced
  • 1 Green mango peeled and sliced into slivers
  • 2 eggs cooked scrambled and cut into strips
  • shredded adobo meat
  • 3-4 pcs Tinapa , deboned and flaked
  • spring onions , chopped

steps

  1. Cook pork liempo as adobo. Separate meat from the sauce. Separate pork fat from the meat. Shred pork meat and set aside. Reserve the pork fat.
  2. In a large wok, heat cooking oil. Add garlic and then onions. Sauté until soft. Pork fat may be added at this point, if desired.
  3. Pour in the adobo sauce. Season with some rock salt. Add cooked rice and mix thoroughly. Stir until rice becomes coated with adobo sauce and acquires an even color. Turn off heat.
  4. To assemble: Transfer cooked adobo rice to a large platter. Top with red eggs, tomatoes, green mango strips, scrambled egg strips, shredded adobo and tinapa flakes. Garnish with spring onions.
