Sentro kicks Filipino cooking up a notch, serving dishes that rival even lola’s cooking. Whet your appetite with a plate of Fried Kesong Puti (P180/320), deep fried organic white cheese coated in breadcrumbs that are so good, you may be tempted to order three plates of that and nothing else. The Fresh Smoked Fish Spring Roll (P270) is quite refreshing, the onion providing bite contrast to the fish’s smoky flavor. The Sinigang na Corned Beef (P310/595), corned beef shanks in sour tamarind broth combines two Filipino favorites into an awesome dish that’s tart on the tongue and warm in the belly. Another popular dish is the Boneless Crispy Trotter (P550), deboned crispy pata that is sinfully delicious. The skin is golden and crispy with just enough fat underneath, revealing oh-so-tender meat. Cap off the decadence with a slice of Coffee Pie (Php150), a firm pie with a smooth, buttery texture, tinged with a whiff of coffee. That, with a cup of actual coffee (P90) would make a sweet end to a delicious, decadent meal.
