Imogen seems to agree with most of the food choices I make, although there are times I can sense her disbelief. Take our recent visit to L’Incontro. After making my choices for starters and dessert, I sensed Imogen snickering behind her napkin when I ordered the Pasta Carbonara for our entrée. I knew what she was thinking. Many restaurants in Manila serve a lazy and fake version of the carbonara. Real Italian carbonara sauce is made from eggs, cream, cheese and chopped pancetta or some good bacon. I told her that if this place was really worth it, then the carbonara would be authentic.

 

While munching on the Insalata di Mari (seafood salad P210), I asked the waiter what their carbonara was made of and he said mushroom sauce. Imogen was smirking. But a few minutes later he came back to apologize and said it was actually made from eggs. After grinding some fresh pepper on the pasta, we eagerly worked our forks. It was rich and creamy in the way canned cream of mushroom can never be. The meal ended on a high note, for after we had ordered a fabulous Cassata (Italian ice cream cake, P200), the waiter brought us a complimentary plate of Prapole or fried fritter dough dusted with powdered sugar.
