Review

They say that in moderation, red wine and champagne are good for relaxing and stimulating the senses, which is just the thing if you or your date seems tense. To fill up this prescription, visit Cav, where you can sample as many as seven different kinds of wines for only P200. But, if you can afford it, then order the Moët and Chandon Rosé.

Of course, it is dangerous to drink without eating something first. Chef Markus Gfeller has come up with a prix fixe menu (price upon request) to go with the wines (they change the menu regularly, so some of the items mentioned here may not be available when you visit).

I started with a sweet and delicate Yellow Tuna Carpaccio, followed by Pierogi in Pumpkin Soup and Rocket Sprouts. There was a lovely interplay of the sweetness of the soup, the bitterness of the sprouts and the meatiness of the dumpling. A Lamb Ragu with Saffron Foam came next, combining meaty but tender lamb stew with a light and airy saffron flavored foam.

The Wagyu Steak with Lemon Risotto and Grilled Shiitake Mushroom as main course was immensely satisfying, especially since the strips of wagyu were tender and flavorful. Ending the meal was a rich VALRHONA Chocolate Soufflé Cake with Fresh Berries and Chocolate Tuile.
