Review

The province of Pampanga has historically enjoyed an abundance of produce, livestock, and in effect, wealth. The people of the area had little want for things because what they need, they grew, and everything else somehow found their way into their hands. “The Pampanga River used to flood the agricultural plains on both sides periodically, and everything would get irrigated,” Claude narrates. “The land became fertile for fruits and vegetables to sprout and grow, and when these waters subsided, we literally had bounty on the earth: Catfish, dalag, talangka, and frogs would suddenly appear! All you really needed to do was to go out and start picking them up from the ground.”

Bale Dutung, or House of Wood as it translates to English, is an ode to this exuberant heritage. Owned and operated by Claude with his wife, Mary Ann, this by- reservation only experience was borne out of passion for the good life. “We strongly believe in what we are doing,” Mary Ann says. “It is our way of life down here, and this is something we are very proud of.”
