At the 9th floor penthouse of The Bayleaf is their banner restaurant, 9 Spoons. Headed by the talented Executive Chef Carlo Santiago, 9 Spoons is managed by the Lyceum Philippines University (LPU) Culinary Institute, one of the country’s top institutions for culinary arts, by holding internship programs and career trainings. Chef Carlo describes the concept of 9 Spoons as a “world bistro” that serves earthy and robust dishes. At any time, you’ll see a hodgepodge of customers–from business executives to foreign backpackers wanting to discover more about Filipino cuisine.

At 9 Spoons, you can expect to spend about 300+ Pesos per head. The servings are big enough for two people, especially the Callos Manileno (P430), and the Kanji Beef Salad (P380), which are both highly recommended dishes.
